Copy some files to and from, it takes about the time it takes to transfer a 1.5gb zip file to my GF's GS4 that it takes to transfer a 200mb zip file to my G2 with a class 10. It's literally 3-5 times as fast, I had to triple check the 80mb of pictures weren't corrupted when they transferred within 3 seconds.

SD cards are for music, photo's & videos and general "slow" application data.
And that also means you can recover those data if the phone craps itself one way or another.
"the cloud" isn't a solution, no matter what the companies says.

My concern is my inability to delete texts (I have every text since day 1 of my iPhone, currently using 12GB) and my 400 songs from iTunes (will those even play or do I have to have iTunes convert them to MP3s?). Let's not even mention app sizes and their storage.

I don't keep a library of music on my phone because 99% of the time I have cell service and can listen to Pandora. Photos and Videos on my phone generally aren't very important and if they are they end up on my Dropbox so I can hotlink them on a website. Any other "slow" application data is found on my network drives so it doesn't need to be on the phone anyways.
What do I do when I'm out of service? Well, that generally means I'm driving so I either turn on the radio or pop in my emergency flash drive which stays in the car for when there needs to be music.
Android doesn't treat the sdcard in that sense anyways, I've never seen a phone which doesn't mount the sdcard over the internal storage thus forcing me to use the slow sdcard to transfer roms, ect. There's no point for a manufacturer to put this amazingly quick high capacity drive into a phone then encourage/let your average phone buyer to buy a very overpriced 4gb class 4 sdcard from a convenience store and cripple read/write speeds to writeable user storage. I've also never had a phone "crap" it's self on me, I've now crossed 3 years on my HTC G2 and it left it's protective bubble bulky case 2 years ago.

I have every text from the last 2 and a half years, although I lost a thousand or so switching roms and forgetting to back them up. I have something like at least 40-50k texts and my archive of text messages is only 10mb tops lol.
Can't help you with iTunes, haven't used it since 2008 and uninstalled it since it was horrible on windows and is generally just intrusive and annoying. If you can't export your music from iTunes then I have no idea why anyone would even use that garbage.

Not fast enough to replace µSD though. Phones record in 720p or even 1080p and even when I'm in an underground bunker in the middle of the desert of a country without a mobile network I still want access to my videos. That's easily worth the 20€ a 16GB µSD costs.
Any AOSP based ROM on my Galaxy S3 kills the battery. But if I revert back to stock touchwiz, the battery life is great, anyone have any tips on preserving the battery on AOSP?

I can stream at a great speed on my phone pretty reliably - it's going through my data cap in an hour that's the fucking problem.

Unfortunately, there is no one.
Thanks to Samsung, AOSP-based ROMs have to use incomplete kernel, which can't use full phone potential, so no smart CPU regulation.
So if you want great battery life - stock-based ROMs only =(
(or find a new phone, Galaxy are for those people, who can deal with touchWiz, and don't want to flash any custom ROM)

Once I solved the "Google Services" battery drain my battery life has been pretty decent. I'm down 4% after having to use the maps to get around a sizable accident and the phone being unplugged for 2 hours.

I've had S3 not long ago, and faced the same problem. Traded it on eBay, because of the problem above - no decent custom ROMs
I find it hard to believe that a battery problem on AOSP ROMs for the GS3 are because of AOSP and not something else.
Just get a class 10
Mainly because 3\4 of ROMs are using CM kernel, which is known for battery hogging.
SlimROM had a decent battery life for me.

The problem with the Galaxy S3 is that it's Exynos, and that means bad drivers for custom roms
So's the Note 2, and I think the one in my phone is the same as the international S3 (Exynos 4412.) It's pretty stable on 4.3 aside from some slight graphical corruption now and then.
It takes a bit of work to get going, but afterwards it's smooth sailing.

Atleast this shows they have a little bit faith in SD-cards, since 64GB or over SD-cards are from the factory formatted as EXfat.
They're one of the only manufacturers who support it, so I'd hope they care a bit
