Poor photo quality. And yeah, I checked to make sure the quality was set to the highest. It just doesn't produce results as good as the stock Samsung camera did.
Exactly what I noticed back on my Galaxy S2. CM camera just wasn't nearly as good as the stock one.

Try using a 3rd party camera app like procapture or camera zoom FX and setting that to best image compression and see if it changes anything.
iirc it's because cm just goes "fuck it throw in the camera app"
whereas the stock rom for the device will optimize the shit out of it

I can't sell it since I'm still on contract with it, and T-Mobile would've payed the ETF to quit, but it's mandatory to trade in your phone for T-Mo to pay it off.

I thought the only thing different camera apps can do differently is filters and effects because there's no full camera API or w/e
Ah shit, T-Mobile will give me $3 for my Droid Bionic. Oh well. I'm going to jump ship off Verizon once my contract expires in May and go prepaid, probably on T-mobile. I'll miss my unlimited 4G though, shit's fast.

Well when you take a photo, the camera sends data to the phone makers camera API which does some processing to give whichever app took the photo. From there, how the app interprets the data can be different. In the stock camera app, it will compress it and probably also crop it according to aspect ratio settings and so on. In a 3rd party app it might do it's own thing with whatever settings you use.
For my phone at least, the stock Sony camera app compressed photos at either 50 percent or 75 percent JPEG compression. With ProCapture I was able to push it to 100 percent (effortlessly) and get an overall better quality image as there was more details. The file sizes were also larger and the difference was noticible.
I also found and flashed a custom Sony camera app which sets the jpeg quality to 100 percent and increases the video bit rate. For quick photos, the Sony camera app was always faster than the slower ProCapture I use if I have more time. And it's much easier to switch to video mode and since it's already at 100 percent jpeg compression it's more or less the same as ProCapture.
There was recent news about RAW support on Android which is pretty cool. The camera raw data will still go through the camera api (most likely) and come out almost untouched where you can do all of the editing you can. It might be a hassle to process and edit the photos if it took some engineers some time to get it right for jpeg, or they failed and the images often screamed a lot of noise reduction even in bright light (I'm looking at you Sony) or too much contrast and saturation (maybe that's just the normal "Smart Auto" setting that caused this, looking at you HTC). It would be cool for Google to have said RAW support and have it ready for Nexus devices in 4.5(?) and maybe a redesign or better featured camera app (like oh I dunno, tap to focus and lock it in video mode???) just in time for I/O 2014.

yeah I wish we could manual focus. it wouldn't be too hard to have it tied to a slider, and after using my buddy's DSLR for a few photoshoots, I vastly prefer manual focus.

Ah, sounds like different camera apps have a bit more power over the end result than I assumed. I'll have to give a few different apps a try. Out of curiosity, would it be possible to flash the Samsung camera app, or does that require a Touchwiz rom?

It might be hard to see what's in focus since you're shooting on a wide lens plus small sensor = more stuff in focus. You're not going to get that fancy shallow depth of field you get from a point and shoot or DSLR.
Now for stuff like Macro it would be much easier and could better nail down the focus on whatever the subject is.
As sensor sizes in phones increase, the lenses used will (or should) also increase in width and... I'm being to technical here. Stuff about focal lengths increasing and how that's not going to really happen because muh thin device.

Macro shots would be my primary use for manual focus. I would rather use my DSLR for detail, but my GNex will have to do for now, as I can't really afford a macro lens.

You could try. It's unlikely that it would work because it might require the touch wiz rom.
Pretty sure that the Samsung camera requires the proprietary Samsung framework, and thus will not work on CM.
OEM cameras seem to work on Google Play Edition devices, but that's because the ROM contains the OEM enhancements, just has the stock Android look.

They actually sell adapters for doing that, the problem is it's an absolute bitch to work with, since the focus is crazy shallow and it's hard to hold the lens steady while you're holding it onto the camera
An easier way is to get an extension tube from ebay/amazon, they're fairly cheap and allow you to get way closer while keeping the lens attached, and facing the right way

My friend has one of those mount to filter adapters where it mounts onto the camera mount, and then the filter threads on whatever lens you're using. It's just really sketchy to use heavy lenses on it.
I'm not sure why there's no manual focus. Even my old Optimus M had slider focus, but the Optimus L9 and Nexus 5 are disappointingly lacking.
I guess the camera API or physically the camera module they use doesn't support it.
