It's kind of hard to say what you should and shouldn't do in relation to any operating system..just use common sense i think it's a global rule of thumb that you shouldn't use most XDA themes
I don't plan on rooting or flashing any ROMs onto it in the future, I guess I was hoping more for tips and tricks - little things that are worth knowing or apps worth investing in.
I would say GMDGestures, but I guess that's already mostly covered in Touchwiz already?

Notification noises (for text messages and what not) go in /media/audio/notifications.

Is Google Now really as functional in outside-US countries? I've heard it has half the voice commands.
It's not much about the voice commands (they all work globally IIRC) as it is about the end features itself. For example, here in Czech Republic it's only really good for weather and navigation (work/places of interest). And I heard that the traffic info was usually 1 hour late everywhere except the capital city. edit: Although to be fair, since the most recent (I/O) update, it's been a bit better. I actually got transport schedules when near a bus stop and once so far a card with a restaurant near me that I didn't even know of. And the new Reminder feature kicks ass.
I pretty much just use it for the reminder feature, which is really awesome. It figures out when you have to leave to make your appointment, why haven't anyone figured this out before? Other than that, it shows me no information that I actually cares about. Sure, it shows me how long it takes to get to my school, but I don't have a car, and commute by bus everyday so I don't care about that. When I'm on the eastcoast, though, around Oslo and such, it shows me points of photographic interest and such, but then the navigation part goes crazy. It constantly tells me how long it'll take to get to something called "PAON Norway", which I have no idea what is, and neither can I find anything online (I think my cousin lives nearby, though, and I spent a night there once, or it could be because I often hit the N key instead of the spacebar, and it's picking up my misspellings)
