You've got enough RAM just install Windows server, spin up a couple Linux VM's and see what you like.
Supports 32GB dimms, so it can go to 768. lel.
Also given it's SB, it's dropin upgradable to v2 ivybridge XEONS.

Put a laptop drive I had in there and it says it can't see the disk. Don't know if it's the disk or if it's that I need drivers for it.
Dell's site for the system is confusing though. 5,000 firmwares and it's hard to find the driver I need.
Cent OS if up to date repos aren't important enough to be a headache.
Ubuntu if you need later versions of various pieces of software and don't feel like compiling from scratch.
So after a bunch of work, looks like the PERC card can't operate in non-raid. So single disks need to be configured as single disk RAID0 virtual disks.

You could use a bare metal hypervisor like ESXi or XenServer. Then you don't even need to commit to an OS and setup. Or even clone it if need be.
That's what I would do with that amount of RAM.

If it's anything like the RAID cards I've worked with, then the firmware can be reflashed so it's just a dumb HBA card.
But We'd need to know the specific model number of the card and/or chipset to tell.

Now I'm gonna grab a old mechanical keyboard out of storage next time I'm at my parents house.
