And that 850w is more than enough. The 570s will pull around 410 alone but even if you OC you still would have more than enough power.

A Hyper 212+ should be able to fit in most mid-towers (from what I've seen) and almost all full-towers. One of the differences is the price, and you'll also see a difference in the number of fans it has support for.
There is a pretty big price gap between the mid-towers and full-towers
Some options:
Mid ($80+): CM690 II, PC-K62
Full ($160): Antec 1200, HAF 932
So if I'm going for better cooling, I should go full tower?

Also, what effect will the case fans have on the PSU? Will I be consuming too much power?

Case fans won't kill a PSU, and certainly not that one.
What do you think about a side air duct? Will that help much?

Why are you so concerned about air flow?
Should I not be? My room is kind of warm (usually around 25-27C) and I'm planning on overclocking this CPU as well as later SLI-ing the GTX 570, I thought I'd have cooling problems.

Buy some decent case fans, and buy a big case with good airflow. You may drop a degree or two buy a an air vent or whatever in the side, but there's really no need to.
Now are the fans that come with a case adequate? Or do I need to find others?
I recommended gentle typhoons earlier, it's up to you if you want them.
Would I have to remove the fans that the case already comes with, or are there places where I can put in additional fans?

I have that case, I don't really use Firewire or nearly all of the drive bays, but it works very well at keeping low temperatures. There is no room for extra fans, although it allows for replacement of the fans for more smaller fans or other fans.
Only problem I have with it is the super bright LEDs on the front, but it's not that big of a deal.
It has no dust filters, though. How often do you have to clean it out?
I've only had it for 3 months, but I haven't noticed much dust collection when I open it up/ on the outside. That being said, some other people have dust issues, but I keep my case in a relatively clean location.
That makes sense. I've also gotten recommendations for this case from others. Apparently the dust filters would defeat the purpose of it being an HAF (higher air flow) case

not really, if anything high airflow is more of a reason to use dust filters because more air = more dust
HAF is just a name, not a specification or anything like that
