theyre regulating who does and doesnt sell food. That could sound like big business trying to disenfranchise small businesses, but it sounds more like the government trying to make sure some asshat doesnt just grow some food with harmful chemicals and sells them at some farmers market, or tries to make cheap, shitty food and sells it at farmers markets.
1. Yeah because criminals fear the Food Modernization act 2.Cheap shitty food is all that a farmers market is
Actually a farmer's market often has higher quality produce since it isn't cheap shit imported from across the country that's half rotten.

You wouldn't enjoy subsisting on 'local' (~100km) foods, especially in the off season.

You probably wouldn't be able to afford a guitar if it was hand crafted unless you were rich, but that doesn't mean the quality is lower than a mass produced guitar.
Yes there is always a pravilence in over emphazing opinion which are not neccessairly fact.

I, personally, would not want to have to go through a harsh New England winter without our global food economy. Plus, your counter is rather bad, as the quality of hand crafted guitars (most guitars are hand assembled, only the body is really CnCed if I remember right, but I may be mistaken) would be far more inconsistent between runs due to it being made by one guy with probably no standard procedure and (almost definitely) less ability to QC. Also, guitars aren't food or even a similar product. Variation in them, as well as things that can be considered "defects" is generally charming and interesting. Defects in food can kill you.
Wouldn't this mean that farmers markets would be fucked?
They are charging a higher tax on poor farmers than rich farmers. That's called a regressive tax.
Rich farmers who make tens or hundreds of thousands of dollars yearly pay a lot more than a $500 fee.
