It's not as much seriously becoming a follower of the olden nordic gods as it is a celebration of the ancient indigenous legends and lore before Christianity was forcefully brought and made to supplant it. It gives the nordic people a sense of belonging and kinship, to be honest. It creates that feeling of "We are the people of the North, we ride with the storms and we crash with the thunder" if you understand at all. In Estonia, for example, the ancient indigenous religion hallowed above others Taara, or Tarapita, who was nobody else but Thor himself. Among other things, Thor was associated with oaken strength. When we hit the gym with my bros, we kneel after warmup and beseech Thor to grant our squats the strength of the gods, for example. Doesn't mean we legit believe and are going to go and wage battles in their honor in hopes of being carried away to Valhalla, but it creates a tangible sense of brotherhood somehow. It's hard to explain. But from an objective viewpoint, I guess you could say the nordic people are experiencing a neo-archaic revival that is largely a fashion statement for now.

It was mostly lone missionaries and monks (and occasionally getting chopped up) until the high middle ages, when the Teutonic and Livonian orders came around to do it by the sword (and by that point, the Nordic religion was dead anyways).

Adopting christianity was often also purely political. Not to mention most pagan religions were "open" to new gods. Which meant that borrowing the Christian god was simple as well.
