Are people forgetting that Rockstar is a company that is very much smart and decent to its customers?
they have always been mostly honest from what I've seen
Remember back at Macworld '99 when Bungie gave an awesome gameplay demonstration of Halo that later was revealed to have been completely faked AI, purely scripted, nothing but a cinematic trailer done in a souped-up version of their in-development engine?
Exaggerated or outright faked screenshots, trailers, even gameplay samples is and always has been the norm, whether you remember the prominent examples from yesteryear or not.
I dunno if it was said in a different part of the conference, but in the video you linked the guy never said it was a gameplay demo. Steve Jobs was talking about graphics and it was pretty unmistakably a cinematic trailer. All the guy claimed was that it was rendered in real time.

Not to mention Halo ended up looking better than what was shown there.

The Halo 2 E3 gameplay demo was purely scripted and completely fake. They'd said that if the player went astray from the scripted path the entire thing would crash.
