they actually have resources to put into growing quality stuff
and if I were a pot smoker i'd be okay with a price hike since in Colorado it's going to schools, and we're like the 42nd worst state for education budget

I don't mind that; I'd rather pay the taxes to conveniently acquire it than take the risks with a dealer. The problem with dealers is unless you know a really good one that's trustworthy you always have the risk of them trying to rip you off, lace your pot, or sell you schwag. Any decent smoker can obviously avoid these problems but it's still annoying to deal with.
I like the idea of going up to a counter and picking out the strain I want with the only hassle being that I need to show my ID.

Marijuana for medical use is way different from recreational use. When going through kimo therapy you need good stuff. When it's being sold for recreational the FDA will control the amount of THC in it like they do alcohol

You can't exactly control THC content like you can control Alcohol content in liquor/beer/spirits/etc.. each strain of marijuana has varying effects and amounts of THC/Cannabinoids, and no two plants produce the same quality.
