It doesn't work like that. I'm in Europe and I've been through one complete currency reform in my lifetime. Basically one day I started getting euros as change in stores, and ATM currency was replaced. Then the old money was slowly removed from circulation by the means of stores taking them to banks and banks getting rid of them and replacing them. It took about a year, but there was no huge impact and seemed quite natural, people spent their cash reserves pretty quickly or exchanged it at the local bank. Apart from the obvious confusion with different monetary value, everything went smoothly and the transition period even created new market for "euro calculators".
EDIT: The old currency was made null eventually, I think it was after a year or so, but the central bank would still exchange the notes and coins for euros few years after.

Too bad all the local stores just switched the local currency to euro's here for example, a small bag of chips from 0,50 gulden (gilder or whatever) to 0,50 euro's.
Well yeah, that happened a lot here too, but the point was that it's not going to cause a disaster, it's not like all of your money is going to be worthless one day. In America it would still be dollars too.
