By that logic psychology and neuroscience should be abolished completely, since applying logic and science to the mind is the very thing these studies are occupied with.

Psychology is an attempt to bring logic to the human mind, keyword: attempt.

You cannot choose. Just claiming you chose is not evidence.
Literally everything shows that sexual orientation is assigned at birth. It is unchangeable. You didn't decide, you just became aware of it or accepted it.

Because that isn't who they are, simply. I'm not saying that you can just "choose to be straight", no, I'm saying that if you do not have to be chained to any way of thinking. There is a difference between being forced to do something and doing it of your own volition, if a gay person suddenly decides they're straight, they can do that, and vice-versa. It's not a bad thing, people change how they think all the time.
The human mind is not a constant, there are millions of them and every one is different. It is not one-size-fits-all. You cannot apply the same logic and reasoning to every single person.

That's completely true, you can change the way you think, but sexuality is not the way you think. That is your sexuality.

Except this doesn't happen. Nobody just up and decides that they are going to be gay from now on. If this were even remotely possible then gay curing facilities would have more than a 0% success rate.

You misunderstand what it means to be homosexual. I could commit straight acts such as fucking a woman, but it wouldn't make me straight. It'd make me straight if I was attracted to women and turned on by fucking them. Screwing men men wouldn't mean you were "being gay", being attracted to them, whilst also being a man yourself would. That's why homosexuality isn't a choice. You cannot choose your sexual attraction.
Believe me, I tried exceptionally hard to be straight in secondary school. I obviously never succeeded though, as I have never been attracted to women.

I don't think sexuality is completely set in stone at the time of birth but it's effectively unchangeable by the time we're aware of what it is
