You're missing out, butter is a pretty amazing thing. While other fats can be substituted for it, its contents allows it to be an emulsifier, so it blends into to liquids really well. Mixing some butter into a finished sauce right before plating gives it a shine and heightens the flavor. Not to mention it has a great overall flavor profile.
Margarine is disgusting in my opinion.
Anyway, butter shortage, that sucks. It pretty important.
