Medium rare or rare has never made me sick in anyway.
Plus the only meat you have to cook till it's well done is poultry, humans have the potential to stand raw beef but stone age technology has removed the need for that. Basically what cooking meat does is remove bacteria from the meat, as long as you cook it long enough it won't kill you.
