Just because you don't notice the difference between a $30 pair and a $200 pair doesn't mean it isn't there. There's a massive difference in quality, sound, comfort and general build. If you have a large interest in music, perhaps it's your hobby, then these benefits could easily be worth it. It's like asking why someone would pay a lot of money for a large TV, or a beast of a gaming computer, or an expensive camera. "duhh, it still takes fine pictures" yeah, it does, but if you have an interest in photography then that more expensive camera could be worth it for the higher quality shots.
$120 is the max I'd pay for a good pair of headphones, any higher and your wasting your money you'd be better off paying for a set of high quality speakers for that much.
