Because everything you could possibly need is on Windows. Now if you want to be "unique" you can go spend an extra 700-1000 dollars for the same hardware and get mostly the same experience.
Linux is aimed towards the enthusiast user, which mostly still use Windows given the lack of software selection on Linux distros but it still means Microsoft has to be at the top of their game.

I would certainly hope the latest iPhone would be more powerful than *insert Android device here* given Apple only has to put out one mobile device a year, which they have complete control over while Android is (ironically) the Linux of mobile phones and the manufacturers get the same resources that I do.
