The term Catholic used to mean the entire Church, all Christians everywhere, since the schism of the 1000's when West and East spilt, the term Catholic has become almost solely used to refer to Roman Catholics. You'll find about 50% of the Christian population would disagree that Roman Catholicism was the first form of Christianity, e.g. Protestants and Orthodox.

The order to submit only exists between a husband and wife. Women have no command to submit to men generally within society.
It is also given with the clear purpose of attempting to win over your husband with righteous behavior, not some set order of men being inherently better than women.
One could easily argue that women are put in a place of preeminence. Men are called to love their wives as Christ loved the Church. Christ both became a servant for and died for the church. So therefore men are called to do the same for their wives.

People are also told to be submissive to both the ruling authorities and to God. Both of those are almost certainly based on the way you were born.

What other definitions does equal have? If you're forcing people to be submissive they're not equal. People would never dare say that a black person should be submissive to a white person, or that black people should be silent in the congregation, yet you think its okay to do it to someone based on their gender?

A comparison between black and white and men and women isn't really accurate. There's no inherent difference between a black man and a white man (all differences beyond physical look are cultural, not biological), but there are plenty of scientifically proven differences between a white man and a white woman. If two people are inherently different, then it makes perfect sense that that the two might have different roles. The key is that having different roles in no way means that they have different ultimate values.
In a marriage the wife is commanded to be subject to the husband's authority, while the husband is commanded to love their wife like Christ loved the church (living to serve her and die for her if need be). Both husband and wife are given preference in different ways. You can't ignore that women are also put above men at the same time that men are put above women.
Also, equality might mean equality of value, or of authority, or of physical attributes, or of any other range of things. I know you don't mean equality in ALL things because no human society even strives towards that.
