I can't find data on this, is there like an economy mode for Teslas? Like a switch that will limit raw power?

To be fair, there are good reasons for that. The drive train has a significant reduction ratio built into it. To go past 155 (what the 85 dual ones are capped at), the motors, and first gear or two would be spinning at some utterly asinine RPM value. There's multiple reasons why that's extremely dangerous.
You could sacrifice torque and increase the max speed of the car significantly, but even 100 is so utterly beyond what you should ever do outside of the autobahn or a race track that the torque is just a better thing to have.
I have an after market touchscreen display in my truck. It takes some getting used to and there are still moments where I'll miss the button or it'll be unresponsive. But I don't have to look at it to know what I'm going for. Muscle memory and all that.

Companies are moving to full touchscreens. I think it will be fairly common pretty soon. Though physical buttons will always be around I think.
The new Volvo xc90 has a pretty good combination of touch and physical.

Touchscreens are okay as long as THERE IS PHYSICAL REDUNDANCY FOR ALL BASIC FUNCTIONS. GPS or advanced media browsing and the like can of course stay on the touchscreen but all A/C controls and play/pause/forward/back/presets should be physical.
What does he do that he can afford a tesla?

Working hard and saving even harder works wonders.
I make $16/hr with total income of around $36k/yr, and my NSX was $41k. The 85D starts from $85 brand new, so logically anyone with a job that nets them $30-$35/hr making around $75k/yr could afford one given the proper habits in just a couples years of proper budgeting, etc. Heck, even at $36k/yr a car with an $85k pricetag isn't out of the question, but it would have to be your one goal, and probably require around 6 years worth of saving (at least based on what my habits/expenses are). If he had a job that paid $100k/yr a car like this would be an afterthought unless he lived in a lavish mansion or squandered money on useless things. And $100k/yr isn't horribly hard to achieve for a successful business owner or someone with high competence in their field if it's a lucrative industry.
Nice things aren't hard to afford if you're good with your money :)

Might be a different person but I recall someone on Facepunch put all their savings into Tesla stocks and sold them a few years later for a couple hundred thousand and had a Tesla at 18.

Dishing out 85 grand for a car cash is moronic, unless you're incredibly wealthy. Best bet would be to rely on a loan to get the car if you're not daddy wharbucks. I'd also consider 85k on a car one of those useless things.

That is a pretty silly logic you have. They are luxury products and besides that the Tesla offers a few rare-seen features. Sure a 1989 Fiat Panda can still drive like a Tesla, but i'd prefer to sit in a Tesla. Or why buy a big TV screen worth 1000$ when you can get a much smaller one for 200$, perhaps its not HD but hey! Its a screen!

I think we'll need an improvement in technology/vehicle before we see this broken unless someone finds a route. I'm pretty sure Casey's route was optimal with the wind perfect, too. Was the best route, supercharger to supercharger.

Want to see people 1-upping each other with new battery technology, not just going slower
So I have a question about these cars, that I'm sure comes up a lot, but...
What happens in a very bad accident on a very wet day? What are the dangers of rescue crews being unable to reach the driver for fear of electrocution? What are the risks of any potential failsafes failing vs a car fire in a standard car?
