Personally, I would not call Israel an apartheid state (unless this includes the WB). But it sets itself up for this kind of scrutiny when Israelis and Israel supporters claim it's a "A light unto nations" and other nonsense (not saying you are). Israel routinely does horrible things while at the same time gloating self-righteously, it's a combination that practically begs to draw ire from others.

I was born in Israel and have lived here for pretty much my entire lift. I also read the bible in Hebrew. I'm pretty sure I know what "goy" means.
For example, Genesis 18:18- וְאַבְרָהָם הָיוֹ יִהְיֶה לְגוֹי גָּדוֹל וְעָצוּם, וְנִבְרְכוּ-בוֹ כֹּל גּוֹיֵי הָאָרֶץ
