Battles in eve can actually potentially play out like that. However, most pilots zoom out completely for situnational awareness and less lag. Fleets typically stay in formation, but the largest fights become massive brawls quickly with people scattered in a fur ball.
Also, lasers, the most common weapon in fleet fights, tend to look sloppy when everyone is using different crystals (therefore shooting different colors) and people are in one big blob.
Just a matter of practicality vs aesthetics.

CFC (ClusterFuck Coalition, aka Something Awful) regularly butts heads with HoneyBadger Coalition (aka TEST Alliance Please Ignore, Reddit community) over disputes ranging from territorial disputes to asteroids.
Think of them as massive, rival drug lords. Both are filthy fucking rich sitting on territory with the most valuable resources in the game. Greed and bureaucracy leads them to conflicts, and sometimes its the slight misclick of some very unfortunate players, which is how the last big battle started.
This time, it is over the tweaked properties of materials gained from mining moons with player owned stations (nicknamed "moon goo"), or something related to that material, and now both sides are scrambling to claim what hasn't been claimed yet, or to fight over control of disputed systems with the "moon goo" in plentiful supply.
Since TEST and CFC both have hundreds of thousands of real life dollars worth of warships (people don't actually buy ships in this game, values are loosely based off of Pilot License Extention (aka PLEX) in-game currency values, since people can technically trade in-game time cards as a commodity, and exchange it for in-game currency (AUR, used for character cosmetics, or ISK, used for everything else)), it makes for some pretty amazing displays of in-game wealth and power when they start shooting at eachother.
For comparison, the largest class of ship in the game, known as Titans, were designed by the developers as the ultimate strategic weapon, like the Death Star from Star Wars. They take a month to just assemble, not including the time/money spent gathering/buying the minerals needed for their construction. You need to own a system via sovereignty for an extended length of time to get the right to build one. Having the infrastructure to build it set up in your station draws lots of hostile attention from neighbors.
Nobody ever expected more than a couple to be built.

You just made the historian in me cringe. Pre-Military Industrial Complex waging war was the single most disastrous thing you could do financially. Even if you won you went bankrupt.

Why are there so many people watching this thread
These battles make for the coolest stories, but aren't that visually exciting, as past a certain point there are simply too many ships to actually be able to tell anything about what's going on just from looking at the screen. You have to rely fully on your "instruments" in order to to do what you need to do, which is why you see people playing in battles like this with their entire screen covered by windows and tabs and charts.
I prefer smaller scale battles, personally. Anything up to around 30 man fleets is fun and reactive and easy to follow, whereas things beyond that start getting pretty hectic. Though the time dilation does help a lot with that, since having everything running at 10% of normal speed gives you plenty of time to react if a bomber fleet tries to nuke you.
