How does jet escorts even help? They can't shoot down the plane or anything.

If the plane was hijacked and it looked like it was going to a city, I'm pretty sure the order would be given to shoot the aircraft down. Unless they contacted ATC and demanded shit, then yeah, they'd shoot it down. Before reaching the city. It'll be clear who's flying (Actual pilots, or the terrorists) based on ATC coms, radar, and procedures being followed (Certain speeds under certain altitudes and within certain airspace) If the pilot's aren't flying it, then my guess is it's going to get shot down before reaching a populated area

They should just do what I believe (Don't quote me on this) they do on Israeli passenger flights which is completely lock the cockpit off during flight so that even if there was a hijacker on board it would impossible for them to reach the cockpit.

Not all the time at least, there was a interesting news story about how during 9/11 when the flights got high-jacked some fighter pilots didn't have time to arm with weapons, so they took off literally with no weapons. There orders where once they reached one of the planes that they where to take it down by crashing in to it. One pilot said she would take the tail, and the other guy said he would hit the cockpit. It was a interesting story nonetheless. I recently was flying and we where told to stay seated unless we need to use the restroom or something, they said no congregating in the walkway and all that too. No one is really to go near the cockpit let alone hang around it.
I read somewhere that one of the toilet incidents was some passengers having sex in the toilets. You don't want armed jets laying around, and I'm sure the pilots would be willing to make that kind of sacrifice to save lives. The point of terrorism is to incite fear. If we get to the point where we need two f-16s escorting every jumbo jet that gets into the air then they've already won.
