The wind sensor can automatically shutdown the launch if it exceeds a certain speed.

To paraphrase the meteorologist: there's a big blob of weird-ass air above the launch site, making it gusty near ground level

I'm betting they ignore it. It's probably wind at about 1000 feet or so, when the vehicle isn't going so fast yet, that they're concerned about. Looking at the vapor on the ground it's barely moving at all. There is no wind on the ground
