They may be unfeasibly hungry, or they may of evolved to be able to have an extremely efficent digestive process.

It's low on the food chain, is extremely nutritious, and requires very little to maintain.[/QUOTE] I was watching this program on TV once about mathematics (it's on the 'smart channel' in Australia), and they mentioned this rule of thumb that applies to biology whereby a larger animal (such as an elephant) eats less in proportion than a smaller animal like a cow, or a mouse. That being, if you bred one mammoths worth of cows, and you had one mammoth, then the cows would in total eat more than the mammoth.

You forget that we now have the power to bypass natural selection via selective breeding(corn for example can't really breed in the wild anymore) for whatever reason.

One mammoth can feed a lot of people so all you have to do is down one and you and your family if fed for a long time. We might have just hunted them because they were a big meal, not necessarily a tasty one.
When I read the title I had an image of flying mammoths with capes fighting bank robbers. I see that possibility has been ruined.

Cattle however, are horribly inefficient. I wonder how nutritional it is, and what color the flesh would be. (red meat, etc.)

You know this isn't such a bad idea, mammoths survived in terrible conditions of an ice age for a good period of time. Selective breeding could make them a viable resource for food considering the efficient use of energy for size. Russia is a good place to start for something like this. Also as a side mention, it would possibly be lower fat then beef if bred properly i think.
