I don't know if it's actually a technical difference but I always think of a fat person as someone who is just chubby and an obese person as someone who is super fat.
On the other hand my dad is the "all natural food" type. He won't buy any food that isn't organic.

I was never really out of shape but the dietary change was one of the easiest things I've ever done and a 30 minute lifting session can easily burn 500 calories. The former is fine, the latter isn't. And as just a general statement not directed to you, people need to remember that not all calories are from fat. Protein, like you said, is extremely rich in calories but won't make you fat if you're actually using it.
