Henry Ford didn't dislike other colors, he just had to use black.
Back in the day there wasn't much in the way of effective automotive paint. The color and composition varied widely. The one with the best mix of price, durability, and speed of drying was called "Japan Black".

Using other colors would reduce the speed at which vehicles could be mass produced, cost more, and be less durable.
Though Model T's were, for periods at a time, still produced in other colors.

My car, 2008 Chevy Cobalt. Not red, but cops seem to notice it because it's silver... Silver seems to be a popular car pulled over by police from what I've seen.
