You've been able to do this in Texas since forever. There are so many deer in the hill country that they're considered pests. But if you do want the carcass, you need to process it within an hour or so or you risk the meat getting contaminated.

Road kill food is unhygienic. Though a waste of good meat if the dead animal is not harvested after it has been run over.
