As long as you keep the rotor loaded and within limits the helicopter doesn't really have to know it's upside-down. Like if you could keep a constant 1G load throughout a loop it would feel just like flying in a straight line at a constant altitude (to both you and the rotors/airframe).
There are a few helicopters out there that can be safely unloaded or even sustain negative Gs, the BO 105 being a popular example.

I'm not an expert on actual helicopters ,however CCPM RC helicopters can fly upside down as well. The rotor can have a positive pitch as well as a negative. I assume the same may hold true on real ones as they basically use the same rotor head design.
