Iago I don't think you understand the process of how food is made. The back is literally where 80% of the work going into the creation of food is done.
Every part of dish has to be washed, cut, or otherwise prepped. This is done in the back.
After the food is prepped, labeled, and properly stored the line cooks (The people who put together the ingredients in a dish) simply take out the required ingredients from the walk-in/freezer/small refrigerator under the counter.

Actually you can because its incredibly unsanitary and to do it right next to the food prep area is such a big health code violation that it probably has its own section.
