Do you have any idea how many stabs it takes to kill a person? The answer is alot of them. This is not self defence in any way since in order to kill the man right on the spot and not have him die some time later by blood loss or something similar, he had to stab the man several times after the man stopped being a threat.

Or stab them a single time in a bad place that would have caused them to bleed profusely(you know, l or cause Damage to a major organ.
Pretty much it all depends on where he was stabbed, just like how people can survive being shot in the head and such.
