To be honest, the core of the EU is way way better than anything that came directly out of lucasarts since episode 6. (Thrawn saga, x-wing series, kotor2, solo trilogy) just to name some of the highest regarded EU stuff.

IIRC, TFU III was cancelled long before Disney got it's hands on Lucas. LucasArts had just gotten a new CEO or something after TFU II was released and he decided that games like TFU did not represent the direction he wanted the company to go, so he canned III.
