Actually, If I remember correctly, Cthulhu went back to sleep because the 'stars' weren't right. Meaning it wasn't time for Cthulhu's awakening.
Be glad we have Cthulhu and none of the other eldritch abominations. Cthulhu is babby mode compared to some of the other eldritch outer gods.

I want to see what the ocean areas would look like without water. Would it really look as deep without the water?

Yeah, Cause theres a fuckton of water in the sea and it gets REALLY deep.
It's going to be some small boring fish, everybody is going to be disappointed because they expected neon lights and tentacles, and scientists will actually understand the fascination of it and happily research it.

You would notice it at the continental shelves, but if you were standing in the dead center you would just feel like you were in any old plain or mountain range depending where you were on the ocean. More than likely plains.
