Unfortunately they are disappearing, its why niche games (simulators etc) are mostly self published. No one wants to take a gamble on something that isn't sure to sell millions of copies.

Different era though to be honest. Current console gamers don't want that sort of game so it makes sense for the publishers not to risk it.
I don't want to sound like a hipster or anything now but it is in my opinion partly down to how "mainstream" gaming has become in the last few years.
Arguing in the console gamers' defense saying they aren't dumb on facepunch is suicide. I'm just not going to try.

These are the same guys who think adding more draconian DRM helps, making generic and forgettable games (or CoD clones) are the way to go for profit, and that you must add rampant sexism when commercializing an existing franchise into the gaming world (like how Batman: Arkham City, despite having the same writer as the animated series, has character designs in which women appear "slutty").

To be honest, the majority of gamers are either too dumb or too lazy to understand complex shooters, that's why twitch reaction FPS's sell so well.

Skyrim's difficulty comes from terrible balancing which is a constant in Bethesda games.

They quite clearly are. CoD sells like hotcakes every year so making 'generic' and 'forgettable' games are indeed the way to go for profit.

To be honest a decent majority of console players are casual players. Many causal players would play games like call of duty because its a simple easy game to sit down and play unlike other more "technical" games available out there.

Agreed with you on the shit games part, but I disagree about excluded talented people.
The developers working for publishers and who only do shit generic games that go through little to no change over the numerous sequel that get made don't have any talents, and most importantly, "talents" don't try to get in teams who are asked to make shit generic titles. They try to go where they are asked to actually put effort in their titles, or go indie, preferably on PC.
We are not in an era where gaming is purely limited to generic shit and where it's hard to find good titles. If anything, we are in the era of gaming where it's the easiest to find good games, if you know where to look, thanks to the internet that really allow more communication between people, giving developers the ability to base their success on talent, and not only on the fame of the publisher they are working for.

Not really, since the main selling point of consoles is how their easier to hook up and "usually" cost less.
Fact given by "console fanboys" (if you want to call them that) and as a general fact by everyone else, which makes it a much more reliable choice comparing to PC.
Not only that, ever since consoles became more of an online competitor compared to the PC, every game has been watered down, some being easier to play on the hardest difficulty than old school games that made you fist the wall even on easy.
