They didn't just check if he is dead/not dead. They checked his global condition and it didn't change in any way for the whole time of the test.

Humans can survive quite a while without food, there are visible signs of malnutrition but they are alive. On the other hand, we can't go much longer than 2 or 3 days without water. Dehydration kills a lot faster than malnutrition. A longer time would also make it a lot harder to cheat. You can't just assume that this man isn't pulling any tricks.

It is just impossible to live without food and water for 70 years. I don't see how people actually believe this.

If we're all so sure that this is impossible, why not get him over to the USA or UK somehow and monitor him there? I mean, if he [I]is[/I] telling the truth, do you know how important that could be?
