Can someone explain to me what these O'Keefe videos are about/how trustworthy the person and content are? I've heard it talks about Hillary apparently organizing the violence in Chicago during the primaries. But seeing how loved it is by r/thedonald I am a little skeptical.
O'Keefe has a history of lying and manipulating his video content to fit his agenda and cause controversy. He's utterly untrustworthy.

Does that excuse the shit a lot of these people have said? Not really, but it also means that you probably shouldn't take any of it at face value. The courts have ruled the same in cases where O'Keefe's work led to investigations. As far as Clinton's campaign giving money to rioters, you have to demonstrate that Clinton gave money to these people specifically for rioting. Clinton's campaign is full of bad judgement, and I wouldn't necessarily be surprised if someone actually did orchestrate bullshit like this, but it's not enough to just suspect that, especially when it's O'Keefe putting forth the information. He's lied on record. He's intentionally mislead people. Even if he produced the best evidence on the planet people shouldn't bother with him until someone reputable independently verifies it. Jumping in with O'Keefe is essentially making a public statement that the facts don't matter, and that media lies and manipulation are OK. There's no way around that.

Any mainstream leader he picks is on the opposite end of the political spectrum, why would a libertarian pick someone opposite from him? Why isn't he supporting Hillary then? Why not any other foreign leader? On the other hand there is no foreign leader with libertarian-esque policies like Johnson so there was no one to really admire. You could say UKIP, but I don't think Johnson wants to be associated with those types.

Any Euro or Aussie FPers want to fill us Americans in on who these guys are and what their deal is? In addition to that there was Prince Hans-Adam II of Liechtenstein, James Alix Michel of Seychelles, and #1 was Vít Jedlička, leader of Liberland which isn't even a real country.
