(I know he's talking about Teamspeak, but I don't know those specifics) To be fair Mumble uses end to end 100% TSL 256bit AES-SHA for it's shit, and assuming you're the one controlling the actual box; it's pretty secure.

This is true, there are quite a few heavily encrypted message protocols, then you can always have extra layers (like 1/2 the message and so on) if it's actually something that needs that much security.

Only if they actually implement perfect forward secrecy (with temporary keys). Otherwise they can just record everything and get the key later to decrypt it.

It can be encrypted, and its (as far as I know) end to end, not even the server decrypts it. It just passes it along. Its made by Germans so given how paranoid they seem to be I assume it does actually work.

They don't need to be reading the emails, they could just be reading the headers which cannot be encrypted because the service would fall apart. You could then be implemented in a crime purely because you emailed the wrong person.

Not sending email doesn't mean you don't use it. You still have to verify with an email, and if you use something like Gmail there is a good chance it's going to stay (containing your username and possibly more personal information for their use).

Free speech and surveillance are not mutually incompatible. You could have the right to say whatever you want while the government reads everything you write. You could have no free speech, and be arrested for protesting in public, but be under no surveillance within the privacy of your own home. They're two separate issues and you shouldn't be conflating them.

Email providers in Germany are required to scan messages and forward those with certain keywords.
They had a vanishingly small number of actual cases from this, so it's most likely a huge waste of money in addition to being completely disproportionate.

Definitely, but I really don't get where this 'so much for free speech' sentiment is coming from. The First Amendment still protects Americans, unless you're actively making threats or planning terrorism in your email you're not going to be arrested. If you can give me examples of people being convicted and sent to prison for being critical of the government in email I'll gladly eat my words.
