To be honest, I don't eat fish at all because I don't really like the taste. I've eaten catfish and I think Mahi Mahi. I've had some caviar from probably salmon but I didn't notice the taste. Sturgeon caviar is destroying their populations pretty badly. And some Salmon populations are declining pretty rapidly. I don't have anything against fishing as long as it's sustainable and fishing is halted if we discover the population is thinning out.

Flavor is more complex than the nature of the protein and even then the denaturing process effects different proteins in different ways.
Certain compounds detected by taste buds and certain notes of scent are not significantly effected by cooking or released by cooking. Other macromolecules i.e. fats and sugars are effected differently by varying lengths of heat too.
Of course if you overcook something you're going to destroy a lot of the flavor, but considering the fact that steaming done before hand is less to affect the proteins and more to soften the fin, it's definitely not overcooked.
Cutting off shark fins is one of the most inhumane things i have ever heard of.

From all sources I've read shark meat is absolutely delicious, depending on the species. It's just not that big of a cultural icon like the fin. But ya it is sold and eaten rarely.
