I'm going to Burger King tomorrow and demand they give me a big mac. When they refuse I will handcuff myself to the counter. I will then be arrested for asking for a big mac. As of tomorrow, asking for a big mac will be illegal.

If gay marriage were legal, that wouldn't have happened. Their getting themselves arrested was because of the fact that it's not legal, which means they got arrested for trying to get a marriage license, not because they got themselves arrested. Thing is I think you're applying the wrong kind of logic to this. True, in a sense, you're right, but that would be more applicable to, say, an argument in favor of gay rights. This is an argument about crimes in general. To be honest, if you're still talking about victimless crimes, I don't even get what your point is. Unless of course I have no clue what I'm talking about and am following this argument completely wrong, then just ignore me.

This wasn't some crime where anyone was hurt. Someone might have been inconvenienced, but only because two people were being denied human rights. An "inconvenience" is still creating victims. There's the offenders - the people doing this knowing full well what's going to happen - and the victims. Sure, they were protesting in a sense, but that's not how you go about doing it. There are protesting laws for a reason.
