A sonic boom isn't a thing that happens just at one speed. Any time the plane is going over the speed of sound, the shockwave produced creates the sonic boom, but it's constantly moving, so at any given time it's only heard at one place.
So yes, it will be creating a sonic boom until the point it goes back down to the speed of sound.
