I think both sides are over-reacting here. On one hand, the manager is being very judgmental on people in his store to ask this. On the other hand, the football players played the race card over such a small thing. They're football players, huge buff people. Manager might have just figured if they wanted to dine and dash, he really wouldn't have any way to stop them. Keep in mind I said might have. It was a really small thing, I mean you pay for your food either way.

Even if you leave before paying... what's the point ? you'll never be allowed to eat there again, and that if the police didn't manage to catch you using the security tapes, that's why you only have pay after eating on pretty much any place that serves any kind of food.

I don't think you're in a position to tell them when they are and aren't allowed to defend themselves.

Paying after you eat is more common than paying beforehand at least where I am in restraunts. Even on pickup/delivery pizza places the food gets made before you are expected to arrive. If you ditch they keep count and eventually blacklist you if you do it over and over.
