I think there was a similar scene to the one described in the OP in a film called 'Splinter'. Only they couldn't cut all of this guy's arm off with the pen knife and had to snap it off with a cinder-block or something :barf:

I'm a big fan of seeing gore stuff. This film's probably very interesting.
