I am pretty sure the modelers in Valve is just as pissed off with them dropping the artstyle as you guys, but the people who want money says otherwise.

Team Fortress could have stayed the same, but the community would have shifted off to a different game by now. The updates are what's keeping the game alive, even though they're sometimes quite bad. If Team Fortress hadn't have had these regular updates, it certainly would be dead by now.
