Since Minecraft doesn't have gravity simulation, I'd say it's reasonable to have a flat planet, unless you wanted to have to float around everywhere and barely be able to see most of it. Not to mention how much that'd affect the filesize.

I am curious as to what happens when you reach the edge, does it expand the map as per usual and thus ruin the map?
also would this work with mods such as tekkit that add in custom resources if the map's already generated?

That is why you have a size limiter plugin, also I believe you can regen ores with a certain config option.
That trailer of "Earth" was dumb as what it showed could've just been any map, i seriously couldn't tell the difference
