Or you can just not do that.
There's a fuckton of dungeons and dungeon-related quests, but there's so many quests you'll always some that don't make you go into dungeons. And if you don't like any of the quests, even better, you can go on a pilgrimage across the land and stumble over all sorts of stuff whose context you can uncover instead of it being told to you by some NPC. If you find clues, those will probably activate quest hooks, too. I have a character that consistently ignores any quest hooks and just murderhobos his way to survival, and it's really fun.
Magic's as potentially powerful as it's always been. It's just a stupid idea to M1+M2+W charge into a dragon with your flame cone spell. My personal favorite is building a rogue-ish character and pouring everything into Calm to unfuck situations in which you've been spotted and to create backstab opportunities. Makes you a glass cannon tho.
It's kinda sad magic's not as complex as in, say, Morrowind, but overall you can still build whatever the heck character you want and loot p. much everything you see from the environment and enemy corpses, which oddly enough can't be said for a lot of RPGs.
Smithing can be grinded like every skill, it's just that iron daggers' cost:xp ratio reached memetic proportions. Like in Morrowind I think you can still level up Sneak continuously by staying stealthed next to an enemy for 120h. But if you're going that far to break the game for stats, might as well use cheats or look for NPC trainers with your hoards of cash everyone makes from stealing and selling everything not nailed to a lamp post. Since there's no definite "You Win!" state in Morrowind, cheating's about as pointless as it gets. If anything the addition of the Legendary system is a response to the mourning of characters getting strong so soon only 1/3 or so of the map has been thoroughly explored but nothing poses a gameplay challenge anymore.

Workshop is making it easy as hell, too. Beam Elven waifus into your house, have tea with oversized British crabs, fear every swing of the enemy's sword as you two decide who gets to sit down near the campfire and not freeze to death today.
Welp, looking back at all positivity I must look like a big fanboy. But I've hit my personal fatigue point like half a year ago and prefer Morrowind which had a much more interesting setting and magic mechanic, even if the overall gameplay was crappier and the unmodded visuals have... not aged well.

Did it work for you? Apparently there are very specific guidelines for extra copies of games, and I don't think it applies to this :/

Well, according to a lot of sources, they DON'T give an extra copy of Skyrim if you get the legendary edition :/
There goes my plan of trading the Skyrim copy for Morrowind. Sad day :c

Nope. They 'fixed' that; simultaneously, they also [I]broke[/I] it because now smithing is levelled proportionally the the value of the item. This means that crafting all your own gear for every tier will get you, like level forty smithing at most. The only real efficient way to do it is to use the transmute spell and make jewelry.

The Binding of Isaac - $2.50 (DLC also on sale for $1.50, definitely worth buying that too)
FTL - $5
Spelunky - $7.50
Rogue Legacy - $5.09
they're all indie roguelike inspired games with randomly generated levels and a ton of replay value, definitely worth the money if you're into that kind of thing. my personal favourite is probably the binding of isaac (which also happens to be the cheapest even with the dlc)
