Honestly, I can't really say I like any of the NPCs in Souls games minus like, people within houses who just yell at you from within so you never see them. They all feel so fake and lifeless. They don't even move their lips, let alone the rest of their bodies, and the fact that I can hear them talk but not see where it's coming from creates a disconnect in my head.
If you haven´t seen the Prepare To Cry series, i suggest you give it a try to see if you like it. The creator recreates the story of NPC´s by dressing just like them and playing through the game while telling their tale.

How dare you insinuate that Trusty Patches is not an amazing character? Absolute blasphemy.
Joke aside, I actually get pretty connected with some of the characters. Solaire, Anri, Big Hat Logan, those are just examples of genuinely interesting characters that all have different motives and, at least in my opinion, stands out for having actual goals to accomplish despite the bleak world, unlike so many others.

Ironically the characters have way better writing than most skyrim characters, who are somewhat animated but feel even more fake and lifeless

They never intended for NPC's to be too much really
The game always was laser-focused on being a fighting game and that's it. NPC's always have been just static interactable things
