No one’s skin color is really ever explicitly mentioned in the books. CDPR’s interpretation is that everyone is white.
Well, it's Polish media and draws heavily on European folklore, it seems reasonable to assume they're central European. Plus, Humans in The Witcher arrived on the continent, went to war with every other race race, and took over; what's more European than that?
Skin color isn't a cultural norm. The cultures of the Witcher are an amalgamation of a lot different cultures from all over the place. Still doesn't mean everyone in the series is always white. It's a fantasy series where skin-color doesn't matter, and is never touched upon in the books.
Imperial conquest isn't unique to Europeans. Asia, Africa, and the Americas all had native empires that conquered their neighbors. It's more of a human trait, really.
Yeah it's not really touched upon but people reading a central European story probably imagine people looking like themselves, but on the other hand it's a fantasy setting so all the racism is directed at intelligent non-humans. You could make the same argument that everyone in the continent is actually Australian with the same strength and logic, but that's probably not the case. That isn't to say you can't have non-European characters, if you really wanted to represent different skin colors you could take the real world as a guide and have the Northerners be light and Southerners dark, because skin color is just evolution's answer to our climate. More sun, thicker and darker skin, less sun and more clouds, lighter skin. I've already seen some arguments that the Nilfgaard Empire could be non-white, probably for that reason.
That bit was a joke, humans are bastards when it comes to landmasses occupied by less well equipped humans.
it's not the real world. humanity invaded the continent 1,500 years before the books, how exactly would they logically have sorted all the dark skinned people to the south and all the light-skinned people to the north??? Evolution doesn't work like that, 1,500 years is not enough time for any sort of evolution to happen.
just face it, there's no good reason for there not to be darker skinned people in the witcherverse. It doesn't take place in Poland. It doesn't take place Medieval Europe. It takes place on the continent with fictional peoples and fictional places and fictional creatures and fictional intelligent species, in a universe where the skin color of humans don't matter.
There are black people e.g. zerrikanians, and they are the exception, not the general case. Otherwise, author isn't going to mention skin tone unless its a special instance or something

Instead I went on the Reddit and saw everyone screaming that a side character is now black and that the Ciri outrage was a carefully constructed plot by Netflix to distract them from fouly inserting their SJW agenda into the show.

The reason Sapkowski doesn’t mention skincolor is because it’s simply not a factor in the series, again, there is nothing in the lore that prevents there being black people in Nilfgaard, Northern Kingdoms, etc... what exactly is lost by her being black?

Don't people of directly African heritage have brown eyes due to melanin? I think the intentions of the author were pretty clear, regardless of explicit statements, especially given how much it draws from Europe as inspiration. And yes, you can argue there were a sprinkling of blacks in historical Europe, but by no means was it a common occurrence. I don't think I'm going to convince you though, so whatever

The continent isn't historical europe. It's a fictional location inhabited by fictional people. Yes, the cultures are mashups of a bunch of different historical cultures, but skin color isn't a cultural norm.

That's literally what the sorcerers and sorceresses do, they're often disfigured so they use magic to make themselves look how they want to be perceived by the world. They also take potions to halt the aging process, Yennefer is ~94 in the books for example.
