The problem with jumping ship willy nilly is that it's not a good idea for the vast majority of people, you're gonna have to have great will power to colonise on a Barren planet as the first years will be very difficult and no doubt highly dangerous for anyone going there, on Earth when building in newer places we have so much luxury for settling an area, food running low isn't something to ever really worry about, clean drinking water is just the same, we can move and back and forth between the building site and elsewhere, on Mars though, the building site is your home, the food you have has to last you so you can't have anyone overeating, drinking water is no doubt the same and can't be allowed to drink more than required, not sure if they could make more on the spot in a short space of time on Mars, I don't know the science behind it as is.
The reality of the situation is so much more complicated than, send people there and boom, done, not implying anyone here is saying that mind you, but we need highly skilled people to be going there, the best of us really, people between 20 and 40 years of age (probably the best, maybe 50 but that might be pushing it with health problems coming into play), people without any problematic issues, both mentally and physically, we can be needing to take of someone over there, everyone has to be capable of taking care of themselves to some degree have someone or some people with medical knowledge to aid those who can't, aswell as psychologist who can help those having some doubts about being there, which I imagine would be a thing for some of them at some point in time, might be a long time before that's ever an issue but it'd need to be dealt with properly.

Elon may have downplayed the difficulty at times, but he has never downplayed the danger. IMO Death will be an inevitable outcome for some if we choose to go boldly to Mars. There will disasters, landers carrying dozens of people may crash, people may starve, freeze, fight, whatever. You may break your leg while outside and lay in agony as your suit runs out of air, you may get cancer or some other grave illness and have no access to treatment, you may be wiped out by storms. But we should do it anyway. SpaceX's, and Elons goals aren't a little lander can mission for a photo op. Starship (Formerly BFR) is intended to carry a hundred colonists to Mars. Musk saying that he wants to Move to Mars is basically his way of saying he fully intends to see a growing colony on Mars within his -able bodied- lifetime.
