Other youtubers may also be making fun of dead bodies and may also be racist as fuck, but no only is that not enough to make it okay, they're also far less exposed than Logan Paul who's in the top sphere of popular channels right now, one of the most popular vlog channels, and in that microcosm is the only one to pull this sort of shit alongside his brother.
Much to the reason why we can't have one rule for one and one rule for another. If Logan Paul can't do it, no one should be able to. If he's allowed to do it, then everyone should be allowed to do it.

Except when it comes to media, different target audiences mean different rules. Something designed for an adult audience can afford to be more violent than something meant for children.
Logan Paul's content is famously targeted towards the teen audience. This means certain rules apply that wouldn't for a channel watched by older folks - especially since Logan Paul does not pretend nor hold a claim that his channel is fictional. He's watched by tons of kids and is setting the wrong example.
It's hard to enforce as a rule on a platform like Youtube, but it's doable, the same way television enforces certain rules which are partly dependent on what kind of audience the channel is designed for.
Oh by the way, just to further emphasize how inconsistent Youtube is at this shit, here's a bit on them removing an entire channel from some minor fuckwit who was pulling shitty pranks.

So this dipshit pulls awful pranks and taunts everyone and gets completely wiped off the site, but Logan Paul gets to pull far dumber stunts, then also taunts people via vlogs (asking them to vilify me and throw all the hate they can at him as he strikes a christ pose), and gets to stay. Youtube's keeping Paul around because he's making money, their excuses are worthless.
And he pushes the same argument in favor of himself that people have pushed here in favor of Paul. Everyone does it so it's fine/there's worse on youtube/it wasn't that bad.

A channel based around harassing strangers in the street with 'pranks' that are borderline assault is way worse than the things I've heard Logan Paul do.

You mean when he harassed strangers in the streets with "pranks" that are borderline assault, only in Japan ?

As far as Youtube pranks go, what he did in Japan was pretty mild. I'm not saying it wasn't stupid or wrong but pretty much the worst thing he did was lightly throw a plush pokeball at a dudes chest and wave a fish at some people.

For scale, these are all the notable things he did in his trip in Japan:
- Pulled his own pants and stood in his flesh-colored underwear in public
- Acted incredibly disrespectful at a temple by talking loudly, throwing a handful of coins at a well, and generally being a nuisance
- Wasted the time of local police forces who had to regularly pull him out of various locations in which he was being disruptive
- Tossed a plushie at a car, a cyclist, a police officer, a cook, a dude in an orange raincoat...
- Screamed while running in public (several times)
- Attempted to commit fraud by buying a gameboy, breaking it, and then returning it
- Stood and lied down in the middle of traffic while screaming at oncoming vehicles, then jaywalked alongside the cars while randomly talking to people in cars
- Jumped onto a moving vehicle without prior knowing or consent of its
- Bought raw food, waved it at people's faces, dirtied some windows with them, then left them on a random car
- Acted disrespectful to many different shop owners and their customers and other such hard workers in a variety of increasingly stupid ways
- Trespassed on land his visa specifically forbade him to enter, found a dead corpse, recorded it, and put it up on youtube
And to you, the worst thing he's done is toss a plushie at people. At this point I'd argue that it doesn't even matter what's "worse" in that list considering the fact he has managed to be more disruptive in this single trip to Japan than most of these prank channels manage to be in a lifetime.
