For the modern gaming crowd, it's far more 'meaty and visceral' than Oblivion or Morrowind, which thus captures the attention much more and makes it feel more engaging. I never played Morrowind to be honest, but Oblivion really suffered from stiff hit detection and characters just floating around as they smack eachother back and forth with their weapons. Sure, it's not much different in Skyrim to be honest, but the little effects they put really made it feel a whole lot different.

I really do wish I could love that game like some people do, but the honestly terrible gameplay really kills it for me. I would take simplistic but smooth and functional gameplay like Skyrim any day over the massively over-complicated, clunky, and dull gameplay of Morrowind any day. Hell, and I know I am going to get flack up the bunghole for this, but I think the gameplay in the Modern Warfare games is even more solid and enjoyable than Morrowinds. Does that make them better games? Hell no, but it does make them more fun to play.
I suppose Morrowind isn't about how it plays though, it is about the experience. It is all about your tolerance level, and mine is just exceptionally low.

I've always loved Morrowinds combat, I guess because I don't play it wishing it to be like Skyrim. They're two wholly different styles that I can enjoy individually. The same can not be said for the the rest of the games however.

Exactly. Simple and functional, but there are plenty of RPGs that just do it better.

Well I like the combat because it's just dice rolling, like an oldschool RPG. I'm not a fan of action RPG's really so the order for me would be Morrowind then Oblivion then finally Skyrim.

I always played Morrowind as a mage, it has the most interesting and powerful magic system in TES series altogether. I never use magicka mods either, just roll with a Breton under the Apprentice birthsign and you'll be fine. Atronach birthsign works too. Magic combat rocks in Morrowind considering you can output consistent damage, mix things up with multiple spell types, and don't need to worry as much about not hitting your targets since the chance of success to cast a spell is more lenient than the physical combat dicerolls. Not to mention how much you can break the game with magic around level 15+, both balance wise or AI wise. Make a levitate on target spell, cast it on a Cliff Racer or an Ogrim and enjoy the show. An early level spell I enjoy making is a lock on touch for 1 point, so I can trap a boss inside a room and pelt him with fireballs. Just a couple examples.
In regards to Morrowind's melee, keep fatigue up before battle. You are now hitting things managably, play for an hour or two after that and you'll stop missing entirely, too many people bitch about this aspect when it completely goes away really early in the game. Not saying Morrowind's melee/ranged physical weapon combat is good because it's actually quite bad, but if you'd stick with it for more than 15 minutes you'd notice you can actually hit things 100%...but really, if you want to play Morrowind, be a mage. It's more fun. I'd suggest pretending the Enchant skill doesn't exist though because it's terrible, pick something else as a minor skill.
PS: Just because a game's old doesn't mean people only like it for nostalgic reasons. Also, I personally think Oblivion is the worst in the entire series, my biggest problem being the boring setting, the main storyline was just as bad as Skyrim's, dungeon crawling got old fast because of how samey they all are, and how they fucked up the level scaling so much. Not to say it's a bad game, but it's definitely a bad elder scrolls game in my eyes. I really enjoyed Shivering Isles though, mainly because it didn't bore me to death and had a setting that was actually interesting and had dungeons other than the same crappy caves and ruined forts over and over again.
