Setting Player Animations

I have no idea what to do here, can anyone give me examples (player model animations, not view model)

Are you looking to replace their animations entirely or just do a certain animation and then go back to normal?

Certain animation then back to normal.

Are they locked during this time, or can they move around?

Also, what animation?

Moving around.
Probably grenade or slam throwing.

Well, assuming you are using a weapon.

Set the hold type to whatever type you want it to be.

And run this somewhere in the weapon on both client and server, where you want the animation to play.

self.Owner:SetAnimation( PLAYER_ATTACK1 )

That will play the attack animation respective to the hold type, such as a grenade throw, shotgun shoot, slam throw, etc.
